v2.0 (long running PR)

This is long running PR and tracker for v2.0.

New release candidates will be made off this branch. Some things might need to backported to main as we go, but the plan is to move forward and dont look back.

• remove ecto macro usage from example project
• remove ecto macro
• docker compose support? docker compose support #71
• docker in docker support? Does not work with Docker in Docker #203
• Windows support? (verify at least) [chore] windows support #155 (backported)
• streaming logs? Find a way to stream logs from docker engine api #62 now the docker engine api is in the project so easier to change
• remove old elixir versions from test matrix
• default to not pulling by default, but how will this work/affect new users?
