update to pnpm v10

Another attempt at updating to pnpm v10, now that it's been out for a while as the default latest

This appear to be able to resolve some issues, like dependency issues for

for future reference, the fix was adding COREPACK_INTEGRITY_KEYS=0 to Netlify's env vars.
