chore: CI fixes + Remove Speakeasy from build system.

🔩 What code changed, and why?

• Small quoting fix for the release check comments.

This PR is also planned to include other fixes for the release workflow, namely ripping out defunct Speakeasy-specific scripts and files.

👍 Definition of done

• Rip out Speakeasy files.
  • Partially complete-- some parts of the docs infra still depend on things Speakeasy generated. Most Speakeasy bits that tie into the build have been pulled out at least.
• Rework old scripts to not use Speakeasy info around versions.
