docs: use the organization's security policy and contributing guide - #159

SECURITY.md asked reporters to email one of the maintainers and, if no answer came within 24 hours, to announce the report in a public issue without technical details, while the organization's security policy sends reports to HackerOne and asks not to use public issues. Its table of supported versions starts at 1.1.0 while the app is at 2.1.0. .github/CONTRIBUTING.md sent questions to "the maintainers above", but lists none. Without the two files GitHub shows the organization's defaults from nextcloud/.github, as it already does for most integration apps: security reports go to HackerOne, and the contributing guide links the developer manual.
