Pins actions/checkout to commit 3d3c42e (release v7.0.1) in the contract-tests jobs of server-dynamodb.yml and server-redis.yml, replacing older v4.3.0-era SHAs that were still on those steps.

No build logic, CMake targets, or test harness configuration changes—only the checkout action version used before the shared ./.github/actions/ci step.
