Track docs impact for jobsink Location path escaping fix

Tracking issue for a small Knative Eventing bug fix. jobsink now escapes source and id values in the Location header so follow-up GET requests keep working when those values contain /, which is common for CloudEvents sources like https://....

This likely needs no user docs change, but I am opening the issue to follow the Eventing contribution guideline for user-facing PRs.
