Add workaround for 4.19 coreos images #322

As of 2/25/2025 the iso name in the openshift dev repo [1] no longer matches what is expected by assisted installer service [2].

While we try to remedy this with the respective teams, this workaround will ensure deployments work in the meantime.

@thom311 @bn222 I reached out to the assisted installer team / tried to track down the team that manages these images to address this in parallel, but for now this WA will atleast unblock CI runs
