wip: feat(metadata): Geometry and Geography metadata support

WIP for Geo types in metadata, this does not include read/write support

I'd prefer to see much of this logic shifted to apache/arrow-go#545 added to arrow-go so that we can integrate the geography and geometry definitions as extension types and then leverage them here in iceberg-go

@zeroshade which part of the logic? This PR only adds the iceberg types and things necessary to parse iceberg schemas containing said types, not sure what of those should rather live in arrow-go

@zeroshade Matt, was the plan to use the GeoArrow spec for that? My understanding was it's not fully finalized (though I'd still advocate for it)

@dwilson1988 That's correct, the plan was to use the GeoArrow spec for it. And it's well designed and configured enough that geoarrow should be sufficient to represent the Iceberg V3 Geospatial types
