This is not entirely true. I have on a number of occasions converted nodes into different content types. However, this must be done programmatically. (The two most recent instances of doing this will be mentioned in my IslandoraCon presentation next month.)

ok, "cannot" -> "cannot easily".

Migrating bundles! That's dangerous stuff! I look forward to your talk!

Do you have any edits for the suggestion just below your snippet, about "create a new node... and programmatically or copy-paste the values"? I could edit it to be more of "A suggestion:" , or we could take it out entirely and tell the reader to search/ask slack for advice.
