Add Adyen as known instance of Maturity Model

@tsadler1988 was so kind to spot your usage of the Maturity Model pattern at the summit, and added a reference here.
Could you confirm that you are happy for Adyen to be added as an adopter to the pattern? (we call these known instances)

Bonus points if you could share 2-3 sentences about how you are using this pattern in practice at your org, and what experiences you made with this.

Of course, if there other InnerSource patterns that you are using, feel free to add your org there too :)

@tsadler1988 the maturity model is currently in the proposal stage at Adyen as part of our OSPO initiatives. We have adapted the model to help define our current state and our desired future state. Please feel free to list Adyen as an adopter.
