Add 2025 watches (Apple Series 11/SE 3/Ultra 3, Galaxy Watch8/Ultra) and their SoCs

The dataset had no Apple Watch released after 2024 and no Apple watch SoC newer than S5.

SoCs (5): apple-s6 … apple-s10, from Apple silicon § S-series: release dates and process node (S6–S8 7 nm N7P, S9–S10 4 nm N4). The table lists no GPU model, so gpu_name is "Apple Sn GPU".

Watches (5), canonical per case size: Series 11 42/46 mm, SE 3 40/44 mm, Ultra 3.

• From the Apple Watch spec table: battery (mAh per case size), 2 GB RAM, 64 GB storage, display size and resolution, S10 chip, watchOS 26.0, release date 2025-09-19, US starting price.
• weight_g is the base aluminum GPS model, from Apple's tech-spec pages (Series 11, SE 3, Ultra 3). Ultra 3 uses the natural titanium weight.

Samsung (third commit): Galaxy Watch8 40/44 mm, Watch8 Classic 46 mm, Galaxy Watch Ultra (2025), plus the exynos-w1000 SoC (3 nm SF3, 1x A78 + 4x A55, Mali-G68 MP2), all from the Galaxy Watch 8 spec table and Exynos. Release date 2025-07-09 is the infobox first-release date.

Series 12 and Ultra 4 (2026) stay out: the table gives their battery only in Wh, and their S11 chip isn't in the SoC table yet.

Noticed while doing this, left for the accuracy pass:

• apple-s5 says 14 nm (Wikipedia: 7 nm N7).
• The existing Series 10 variant records have ram_gb: 64 (that's storage) and soc: apple-s1.
