Public extensions on super common types like string are a nightmare. They pollute the string interface and will get picked up by developers one day or another which could create unnecessary dependencies to ClickHouse. Additionally, that prevents you from making any change to the signature of these methods.
Breaking changes are always to be avoided but since this library is new, it's the best time to do it.
