bug: email templates not properly displaying across all email clients

There are multiple issues with automated email formatting/display across the various email clients (e.g., Outlook Desktop, O365 web, Gmail web, etc.).

Each email template needs to be reviewed in various clients and using both light & dark themed variants for each client to ensure everything is displayed, rendered, formatted properly.

For example:

Outlook Desktop

Note the white background when themed dark, the logo is dark (on dark background) and the spacing of the "https://studio.ues-dev.io" background box is not spaced correctly.

Gmail

Note the white background when gmail is themed "dark"
