guess_category_from_view is only used in add_layer_from_images. Should also be used in dataset.from_images?

This function reads data to heuristically determine if a layer is a segmentation/labels layer. I’m not sure why it is not used in dataset.from_images but only in dataset.add_layer_from_images. Compare discussion at #1392 (comment)
