[ProjectHelper] Read Fields content to build FieldInfo strucutres

Use the content on the project bo build the Field Info strucutre to manage fields in local with Single Selects. Maybe worth thinking on iterations too.

• sym : local char to use when refeering to each value. Useful when displaying values
• order : value order when sorting
• option : value
• Key: word that define the option useful for parameters input when specifying the value

Use the Description to store some values. Maybe use json format on the description
