Update documentation with new dashboard UI and directions

We have a number of places where we show old screenshots and describe the old UI.

TBD what pages we need to update, but it will likely be a list of pages here and lots of small PRs.

@agjohnson Hello! I would like to contribute to the updates. Are there any priority sections I should focus on?

Would I open a PR for the sections I am able to review/update?

@katrinechow Great! There are no specific high priority sections, just any place in our user documentation that currently has a figure or image referencing a screenshot. I pulled up a list just by searching for the terms .. figure:: and .. image::.

It would be easiest to do this in small chunks, maybe per page even. The tutorials are going to be the hardest, those are probably near the bottom of the list because of that.

I was going to be chipping away at this issue this week, but I'll keep an eye out for any contributions.

While doing this work, it may be worth to take a look at the URL as well and adapt them. There are a bunch of readthedocs.org that needs to be changed to app.readthedocs.org and similar ones.

Good call, that is an easier update to start with too. The screenshots and directions will take a bit more to produce
