It would be helpful to have a time-picker version like the current out of the box Date-Time picker.
Basically, the time field can be clicked into and you can type the entire time, not splitting up hours and minutes into different boxes.

I also found the text version of this component to be flakey... specifically if I wanted to update a time and hit back-space enough times (more than 2) it changes the date field to be "invalid date" which could be frustrating for a user.

We would love to have this as well. A drop down with selectable times (default with 30 min interval, but configurable interval would be nice) and manually overwrite. Same like in e.g. SharePoint list form and scheduling Outlook meeting
