Flatbread

Recipe by Marilyn Bailey

Ingredients:

  • 2.5 cups flour
  • 1.5 cups graham or wheat flour
  • 3/4 cup shortening (Crisco)
  • 2 cups boiling water
  • 1/4 tsp salt

Directions:

  1. Put dry ingredients in a mixer.
  2. Boil water.
  3. Melt the shortening in the boiling water.
  4. Pour the melted mixture into the dry ingredients.
  5. Mix well.
  6. Roll the dough very thin (similar to lefsa).
  7. Fry on a lefsa grill at around 475°F.
  8. Bake in the oven at 325°F for 12-13 minutes, or until starting to look hard. Flip halfway through.

Notes from Amanda:

  • Bake at 325°F for 12-13 minutes.
  • Roll out with a small amount of flour to prevent sticking.
  • You can use hot water from a water jug instead of boiling water; it works just as well.

Esther Tonneson

  • Time to make: 2 hours

Ingredients:

  • 5 cups fine whole wheat flour (Note: this might be cut off from the card due to a hole punch?)
  • 1 cup quick oatmeal
  • 3 cups white flour
  • 3 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp salt
  • 3/4 tsp cinnamon
  • 1/2 cup or less (about 1/3 cup?) sugar
  • 3/4 cup melted margarine
  • 1.5 cups evaporated milk
  • 1.5 cups hot water
  • 1.5 cups sweet cream

Directions:

  1. Mix all dry ingredients together.
  2. Add the melted margarine, evaporated milk, hot water, and sweet cream.
  3. Cover the batter with wax paper to prevent drying out.
  4. Fry on a lefsa grill at 400-425°F. Fry slowly to avoid browning too quickly.
  5. Lay separate pieces to cool.
  6. Note: The original recipe says not to bake in the oven, but it's crossed out and says to use the oven for half the recipe at 350°F.
