When running docker-compose up, I get the following error:

Seems to be the same problem. Here's the directory it reinstalled:

$ ls valheim/server/ -l
total 4
drwxr-xr-x 2 ubuntu ubuntu 4096 Apr  3 12:21 logs

Logs again:

$ docker-compose up

Have you tried deleting your server directory and letting it reinstall?

hmm, would you possibly be willing to try and upgrade your docker engine version? and utilzie docker compose v2? I ask bc docker compose v1 is becoming EOL in 2 months https://docs.docker.com/compose/release-notes/
