Meat Ingredients
=================
1/2 Large white onion, cut into chunks
1 lbs ground lamb
1 lbs ground beef
1 Tbsp (4-5 cloves) fresh minced garlic
1 tsp dried oregano
1 tsp ground cumin
1 tsp ground marjoram
1 tsp ground rosemary
1/2 tsp ground dried thyme
1/2 tsp ground black pepper
1/4 tsp kosher salt
Tzatziki Sauce Ingredients

1 Cucumber peeled (striped), and sliced into eighths
1/2 tsp kosher salt
1 Tbsp (4-5 cloves) fresh minced garlic
1 tsp white vinegar
1 Tbsp extra virgin olive oil
2 cups fat free Greek yogurt
1/4 tsp ground black pepper
Meat Instructions
=================
1. Place onions in food processor and chop until very finely chopped
2. Place chopped onions in paper towel or a kitchen towel and squeeze out all the juice
3. Combine onion, meats, and all other spices in a large mixing bowl, mix together with your hands
4. Cover bowl and place in refrigerator for 90 minutes
** At this point you can jump to the Tzatziki sauce instructions and make that while you wait
5. Preheat oven to 325F
6. Lightly grease the inside of a bread loaf pan
7. Place meat mixture in food processor and run for 60-90 seconds or until the mixture is well blended and sticky
8. Transfer meat mixture to loaf pan, pressing it into the pan to remove all air gaps
9. Place a damp kitchen towel in the bottom of a roasting pan and place the loaf pan on top
10. Fill the roasting pan with boiling water bringing the level up to about half the height of the loaf pan
11. Bake in the oven for 45-55 minutes or until the meat reaches an internal temp of 165F
12. Drain fat, let cool slightly and then slice thin
Tzatziki Sauce Instructions

1. Grate the pealed cucumber slices in a food processor
2. Place grated cucumber in a triple layer of paper towel to dry and set aside
3. In a large mixing bowl combine the garlic, salt, vinegar, and olive oil
4. Stir in the grated cucumber and pepper
5. Finally, mix in the yogurt
6. Cover and place in refrigerator until ready to serve
** Serve meat and sauce on a warm oiled pita and top with tomato slices, red onion slices, and crumbled feta cheese for traditional Gyros
