DOC, CI: Deploy tag specific documentation

Deploy docs corresponding to released tags. We need to make sure that the links to the code source's from the method api's should point to the correct tagged version of the code. This seems to be supported using github actions.

Yeah, I wonder if I'm pushing for too much on this one. Probably the simple "deploy from main" will indeed suffice until/if we get heavy external usage.

Worth leaving it open for the future though.
