Can't get external mpv player to use conf file

Hi, I am trying to use mpv-shim on a M1 Mac. When starting mpv-shim from the terminal, it says that I am using external mpv playback backend. Then after I open a cast a video in mpv-shim and go to settings in my menu bar, it opens my mpv.conf ~/Users/user/.config/mpv/mpv.conf that I had for used for a different mpv installation.

But any changes to that mpv.conf file doesn't do anything, so I'm not sure how I make changes to mpv.
