Ingredients

  • 2 chicken breast
  • 1 tbsp Greek yoghurt
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp dried oregano
  • 1 tbsp honey
  • Drizzle of olive oil
  • 1/2 lime
  • Salt and pepper
  • Wooden skewers

Salad

  • 1 red pepper
  • 2 tomatoes
  • 1/2 cucumber
  • 1/4 red onion
  • 40g feta
  • Small bunch mint
  • Small bunch dill
  • 1/2 lemon
  • Drizzle of olive oil

Tzatziki

  • 4 tbsp Greek yoghurt
  • 1 clove garlic, diced
  • Small bunch mint, diced

To serve

  • Roasted flatbread

Method

  1. Soak your wooden skewers in water for at least 30 minutes, this will prevent them burning.
  2. Mix everything for the chicken marinade together in a bowl, add the chicken cut into cubes, mix well and set aside. If you can, marinade overnight or for a few hours, if you don’t have time that’s also fine.
  3. Add the chicken chunks to the skewers and airfry 200 degrees for 12-15 minutes. (The cooking time is dependent on how small you cut your chicken into. )
  4. Cut your tomato and red pepper into chunks and slice that onion and cucumber. Mix together with the crumbled feta, lemon juice, drizzle of olive Oli, salt and pepper.
  5. Mix everything for the tzatziki together together with a pinch of salt.
  6. Plate up and serve with a side of flatbread.
