I redid them in TiKZ for consistency already: Once i am finished I will do a PR, it is in the branch https://github.com/hendricius/the-sourdough-framework/tree/better_plots_tikz will also include for fix #390 |

@cedounet thanks! I just checked - there's no chart associated. If I remember correctly I drew the charts in Figma myself. So there is no underlying spreadsheet. I propose we use the ones from the hardcover book as they are schematics. I'd love to be able to collect exact data myself. But I'd need to buy an alveolograph first to check dough strength 😃. That would be a dream come true for a bread nerd. Maybe I can also tinker one together myself. |

Are figures 10.1 (baking: Surface temperature) and 12.16 (Troubleshooting) are supposed to be the same?
they are different files though
