Most people create starters using white flour without trouble, including me. It's misleading to suggest that you have to use whole grains. Also, some of those whole grain starters don't like to adapt to leavening white flour breads.
A mix of white and whole grain flours might be better than all-white, but it is by no means the only or best way.
