add more accessories and have my own server create the images

Is it possible to add more accessories such as more hair or beard, and have my own server create the images so I avoid calling the api to third parties? If so, I would like to know how, thank you

For adding accessories, I assume so, however that doesn't happen in this repo. It's done in fangpenlin/avataars, which itself uses avataaars.com as its source. So, yeah, it's possible but it'll be a bunch of work :)

As for running it yourself, of course! This repo is open source and standalone, so feel free to fork it. I host it on Heroku and it works like a charm, although you'll need to use a Pupeteer buildpack. Let me know if you're stuck and I can help out.

Perhaps this project combined with minio / nginx, it is enough as a privatization solution.
