Upgrade hyper/http to version 1.x

This issue was originally created by @zecakeh at matrix-org/matrix-authentication-service#2530.

The new major version came out a few month ago and crates are slowly upgrading to it.

Known dependencies still on http 0.2:

• opentelemetry-http Upgrade to hyper/http v1.0 open-telemetry/opentelemetry-rust#1674
