Create new tasks to fix the coverage. Expectation is 100% lcov with argumentation for excluded parts

Will pick this up once (eclipse-score/score_cpp_policies#9) is merged — it adds tooling to surface untested source files as 0%-coverage entries, which will help identify the real coverage gaps here.
