Rename "CONTENT_STORE_" variables

The environment variables that the preparers use to find the content service are all named CONTENT_STORE_.... Most of the project calls it the "content service" instead, including our glossary which is meant to normalize stuff like this.

Rename the variables to CONTENT_SERVICE_... to be consistent.
