node-sass errors during stencil start

Opening this to document the issue for others to find since there are no other search results with these errors related to BigCommerce and it took an unfortunate amount of time to resolve.

npm warn deprecated node-sass@9.0.0: Node Sass is no longer supported. Please use sass or sass-embedded instead.
Error: Node Sass does not yet support your current environment: OS X Unsupported architecture (arm64) with Unsupported runtime (137)

The fix is already "documented" though obscure. https://developer.bigcommerce.com/docs/storefront/stencil/cli/install

Note: If the Python version is more than 3.12, then you should install distutils using the following command: pip install setuptools

Hi @tekstrand, are you using mac with rosetta mode on?
