Massive overhaul

- Added some documentation
- Changed `start` and `stop` to `startListening` and `stopListening` to indicate that it doesn't actually start any kind of animation
- Added a catch to stop duplicate adding of the same events
- Simplified and refactored code
- Fixed hover show hide issues by separating the events that are logged for each
- Fixed `keepOpen`
- Split out the `HoverOptions` interface
