Add test for schema coverage tool

We need a test for the schema coverage measurement script schema-test-coverage.mjs provided by @jdesrosiers so we notice if it breaks again.

We are switching to https://github.com/hyperjump-io/json-schema-coverage instead and will retire our old schema coverage measurement script.
