Added docker configuration, updated dependencies

Had some issues setting up the mongodb-grafana service so I thought i'd dockerize the package. Might be useful for the repo.

• Added a Dockerfile to build the mongodb-proxy service.
• Inlcuded a docker-compose.yml file to enable the option to quickly setup the whole stack.
• Descibed the setup for docker in the README file
• Updated some dependencies
