Sometimes people represent themselves in meetings, rather than being affiliated with an organisation. We probably need to support that.

Acceptance Criteria

This story can be considered done when:

Given some meeting data

When the meeting involves an individual not affiliated with or representing an organisation

Then this should be tracked correctly by the backend, and displayed correctly via the API and UI
