Just ran into this problem, I'm on win 10 node 19 canvas 2.11.2, looks like #1836 has been merged, but I'm still encountering what appears to be the same issue.
problem is reproducible with the following script:

import {loadImage} from 'canvas'

const path = 'G:/É.jpg'
console.log(await fs.readFile(path))
loadImage(path)

resulting in this output

as a workaround using

let blob = await fs.readFile(path)
const img = await loadImage(blob)

appears to be just as fast and doesn't have the same issue (there may be memory implications of using this method, i haven't tested it thoroughly)
